Baked acorn squash:
2 acorn squash
2 ears corn, shucked
1 package ground turkey
1 can black beans, drained and rinsed
1 can diced tomatoes, slightly drained
2 garlic cloves, chopped
1/2 green bell pepper, diced
Preheat oven to 375. Cut squash in half and remove seeds. Bake flesh side down for 45 minutes.
Heat grill pan on stove to medium high heat. Brush oil on corn and sprinkle with salt. Roast on grill pan until done, rotating sides. When cool, cut kernels off.
Brown ground turkey in pan and drain when done. Place back on heat and add remaining ingredients. Season to taste
When squash is done, fill cavities with the stovetop mix. Sprinkle with mozzarella and bake another 5-7 minutes, until cheese is bubbly.
